Vegansaurus leveled a challenge and I've responded. I attempted to veganize a meat cake, Thanksgiving style!
Here's my beauty, with ooey gooey marshmallowy goodness dripping down the side. And inside:
Top layer: Suzanne's Ricemellow creme
Next and outside: Mashed sweet potatoes
Next: Homemade, fresh, from scratch, tofu turkey!
Next: Cranberry sauce
Next: Stuffing
Next: Mashed potatoes
Bottom layer: More tofu turkey!
Here are some quick tofu turkey cake instructions:
Pre-heat the oven to 400-ish.
Take 4 packs of extra firm tofu, pressed and squeezed as much as humanly possible, crumbled into a large mixing bowl.
In a separate bowl, mix together the liquid flavoring:
1/4 cup olive oil
1/4 cup soy sauce
2 tablespoons miso paste
5 tablespoons orange juice
1 teaspoon mustard
a tablespoon at least each of powdered sesame seeds, sage, and paprika
some garlic and onion powders
a little black pepper
Pour the flavoring into the tofu bowl and mix well, then press into two 8-inch cake pans. Bake for an hour until brown and spongy and delicious :)
I admit, I was completely skeptical at first. Dubious, even. But it's actually pretty damn spectacular, if I do say so myself. The omnivorous Hubster really loved it. Nom!
